  • 2 Cups Greek Yogurt
  • 2 Cups Granola
  • 2 Cups Berries (blueberries, strawberries, raspberries)
  • 2 Tablespoons Honey (optional)

Directions

  1. Start by layering Greek yogurt at the bottom of your bowl, jar, or cup. 
  2. Add a layer of granola on top of the yogurt. 
  3. Next, add a layer of berries on top of the granola. 
  4. Repeat the layering process until you’ve filled your bow, jar, or cup. 
  5. Drizzle the top with honey if desired.

No-Cook Lunch Recipe: Avocado Toast

Avocado toast for lunch is a simple yet flavorful dish. This no-cook recipe features creamy mashed avocado, juicy cherry tomatoes, and zesty red onion on top of a perfectly toasted slice of bread, making it a satisfying and nutritious meal that can be enjoyed at any time of the day.

Ingredients

  • 4 Slices of Bread (whole wheat, sourdough, multi-grain, or gluten-free). 
  • 2 Ripe Avocados
  • 1 Cup Cherry Tomatoes (halved)
  • ½ Medium Red Onion, thinly sliced. 
  • 1 Tablespoon Lemon Juice
  • Salt and Pepper to taste

Directions

  1. Toast the bread to your liking. 
  2. While the bread is toasting, slice the avocado in half and discard the pit.
  3. Scoop out the avocado flesh into a bowl and mash it with a fork until smooth. 
  4. Add lemon juice and salt and pepper to taste with the avocado, mix well. 
  5. Spread the mashed avocado on the toast. 
  6. Top the toast with sliced cherry tomatoes and red onion. 
  7. Add a dash of pepper and salt to the top. 
  8. Enjoy!

  • 2 cups Cooked Chicken Breast (diced or shredded) or two 5 oz cans of cooked chicken (drained). 
  • 4 Cups of mixed greens
  • 1 medium cucumber, peeled and sliced. 
  • 1 cup cherry tomatoes, sliced. 
  • ½ medium red onion, sliced. 
  • 1 medium avocado, diced. 
  • 2 Tablespoons lemon juice. 
  • 2 Tablespoons of olive oil.  
  • Salt and pepper to taste. 

Directions

  1. In a large mixing bowl, combine the diced or shredded chicken with the mixed greens. 
  2. Slice the cucumber, cherry tomatoes, and red onion. Add them to the bowl. 
  3. Mix lemon juice, olive oil, salt and pepper in a small bowl until well blended. 
  4. Top the avocado on the mixed greens mixture. 
  5. Drizzle the lemon dressing over the top of the salad. 
  6. Serve and enjoy!
